Green Salad

Ingredients:
* 4 cups mixed greens (lettuce, spinach, cilantro etc.)
* ½ cup cucumber (sliced)
* ½ cup cherry tomatoes (halved)
* ¼ cup red onion (thinly sliced)
* ¼ cup shredded carrots
* ¼ cup avocado (diced, optional)
* ¼ cup nuts or seeds (sunflower seeds, walnuts, etc.)
* ¼ cup pomegranate
For the Dressing:
* 3 tbsp olive oil
* 1 tbsp lemon juice (or balsamic vinegar)
* 1 tsp Dijon mustard
* 1 tsp honey (or maple syrup)
* Salt and black pepper to taste
Method:
1. Wash and dry the greens. Chop or tear them into bite-sized pieces if needed.
2. Slice the cucumber, tomatoes, red onion, and avocado.
Make the Dressing:
3. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and black pepper.
4. In a large salad bowl, combine the greens, vegetables, nuts, and cheese (if using).
5. Drizzle the dressing over the salad and toss gently to coat evenly.
